I have a Concept.
And need a little help with it.
I'm thinking of delivering small collections of cookies to people for Christmas.
You know, a half a dozen or so of three or four really good cookies in a nice box of some sort.
Rather than buying random thingies no one needs.
The trouble is, I'm not a big one for baking stuff.
So I have only the one killer cookie recipe.
So, if I posted my utterly sinful Lemon Creamcheese Shortbread recipe?

Brilliant idea. I don't know anyone who needs more "stuff" but I love the thought of someone taking the time to share homebaked treats. It seems more thoughtful and caring. I know food shouldn't equal love. But in a time-starved world, when someone takes the time to cook or bake for you, that's kind of like love, isn't it??

Oh, and I'd say that those fudgy, peanut buttery, oatmeal-y "no bake" drop cookies might work for this as well. I don't have the recipe anymore from my mom but I've used one that I've found on the web (they're everywhere) and it seemed to work the same (same concept at least). Easy too. 🙂

I like to bake, but I'm not very good at it. It's pretty much hit or miss and I have a few cookie recipes that I stick to out of familiarity. My best is a ginger molasses cookie and recently I mastered a pumpkin cornmeal muffin.A few years ago I went on a baking spree and made about eleventy dozen christmas cookies. While trying to find places to put them, I started stacking 3 or 4 and wrapping them in foil. The next day I had to go shopping so I threw a couple of parcels in my shopping bag and gave them to the homeless regulars in the neighborhood. I even put some next to sleeping folks so that when they woke up they found a present.

I make these every Christmas, they don't SOUND very good in theory but they are AWESOME and everyone can't believe how good they are. Welfare CookiesOne box of Saltine Crackers1 cup sugar1 stick of butter1 bag of chocolate chipschopped walnutsPreheat oven to 350.Spray baking pan with spray or line with aluminum foil and then spray foil. (I suggest you do the latter)Line baking pan with the crackers breaking the edge pieces so that they totally cover the bottom of the pan. You will need to use a pan with sides for this such as a jelly roll pan. Melt the butter in a small saucepan, and stir in the sugar, cook and stir (boiling gently) until sugar turns a light caramel color.Spread sugar mixture on crackers and place in oven for 10 minutes. Take out and sprinkle entire bag of chocolate chips over all, once chocolate chips melt some spread them out until they cover all of the crackers.Top with Walnuts.Allow to cool and cut into 24 pieces. YUM!

I make something very similar – and it is sinful! I just use brown sugar instead of white granulated. Oh, and I don't top with nuts because…well…I don't want nuts to get in the way of the chocolate.
At any rate – really, really good!

Upon re-reading what I wrote, I feel compelled to clarify – when I say "sinful" I mean that the result (cookies? candy? bars?) is so rich and delicious that it is wrong in so many wonderful ways.

I'll also share my super easy fudge recipe because everyone loves that too.2 Step FudgeOne bag of chocolate chipsOne can of Chocolate Frosting.Stir them together in a microwave safe bowl and nuke for 30 seconds at a time stirring between nuke sessions until it's still kind of thick but the chips are mostly melted. You don't want the frosting to break down completely so be sure to watch it closely.Take a 9 inch square baking dish and line it with saran wrap and then spray the wrap with a quick spray of Pam. Pour the mixture in and spread it out and let it set up. Then cut into squares and pull out of the pan using the saran wrap. I've mixed it up many times using peanut butter chips and chocolate frosting, buttterscotch chips and chocolate frosting, cream cheese frosting and chocolate chips, the possibilities are ENDLESS. I've even used a frosting bag to squeeze it out onto parchment in "kisses" and packaged it that way. You can even mix nuts or mini marshmallows in if you want. I've even crunched up peppermint sticks and topped it with that. Like I said you can modify it any way you want and it's always FABULOUS! And So EASY!
